Freeze-dried fruits often carry a higher price compared to traditional dried fruits, and this cost difference stems from several key factors in their production process.

First, the freeze-drying technology itself is energy-intensive and expensive. Unlike simple sun-drying or air-drying, freeze-drying involves freezing the fruit at extremely low temperatures (usually -40°C or lower) and then using a vacuum to remove moisture through sublimation. This process preserves the fruit's shape, nutrients, and flavor far better but requires specialized, high-cost equipment that demands significant energy input.
Second, raw material usage is much higher. Due to the removal of nearly all moisture (over 95%), freeze-dried fruits lose a massive amount of weight. It typically takes 8 to 10 pounds of fresh fruit to produce just 1 pound of freeze-dried fruit. This means more fresh produce is needed per final product, driving up raw material costs, especially for fruits that are already seasonal or costly to grow.
Additionally, the production timeline is longer. Freeze-drying can take 24 to 48 hours per batch, compared to hours or days for other drying methods. Longer production cycles reduce output efficiency, increase labor and operational costs, and tie up resources-all of which contribute to the final retail price.
Finally, the superior quality, including retained vitamins, crisp texture, and long shelf life (without added preservatives), also justifies a premium, as it meets consumer demands for healthy, convenient, and high-quality snacks.
