What is the difference between freeze-dried fruit and dehydrated fruit?

The method used to create freeze-dried fruit involves first freezing the fruit, then placing it in a vacuum chamber to evaporate the ice, leaving behind dry, crisp, and light fruit. This process is incredibly effective in preserving the fruit's nutrition, flavor, and structure. Conversely, dehydrated fruit is produced by heating water out of the fruit-usually in an oven or dehydrator-leaving the fruit with a chewy texture and perhaps a stronger, caramelized flavor.

Fruit that has been dehydrated or freeze-dried each has benefits and applications. However, because it is easier to rehydrate for use in recipes, freeze-dried fruit frequently has a longer shelf life and is more adaptable. You may include fruit in your diet in a simple and healthful way with either freeze-dried or dehydrated fruit, depending on your preference for the crisp or chewy texture. Ultimately, because of its great nutrient retention and adaptability, freeze-dried fruit is still a popular option.
