Lyophilization, another name for the freeze-drying process, is a labor-intensive and precise food preservation technique. The freezing stage, which starts the process, involves quickly freezing the fruits or vegetables at very low temperatures (typically between -40°C and -50°C). This stage makes sure that the water in the meal condenses into tiny ice crystals, which is essential for preserving the food's general integrity and cellular structure while it dries. Depending on the starting temperature and the effectiveness of the freezing apparatus, the initial freezing may take several hours.

The food moves on to the primary drying process, or sublimation, as soon as it is sufficiently frozen. At this point, the freeze drying chamber's pressure is drastically lowered, resulting in a vacuum. The meal is then slowly heated, allowing the ice to sublimate straight from a solid state into a gaseous state without going through a liquid phase. This stage requires the most time, and it may take up to 20 hours. The food's thickness and water content, as well as the effectiveness of the heating and vacuum systems, will determine the precise cooking time.

The process enters the desorption phase, or secondary drying phase, once most of the water has sublimated. In order to eliminate any remaining moisture that is still trapped within the meal, the temperature is steadily raised throughout this stage. Depending on the intended final moisture content and the particulars of the food being processed, this step may require an extra 6 to 12 hours.

To guarantee the greatest quality of the finished product, close observation and management of temperature and pressure are necessary during the whole freeze drying process. Variations may have an impact on the food's flavor, texture, and nutritional content.
