How is freeze-dried fruit made?

Fruit that has been freeze-dried maintains its structure and nutritional value while the fruit's moisture content is reduced. First, the process involves choosing ripe, fresh fruits. These are then cleaned, peeled, and cut into the appropriate sizes. The flavor, color, and nutrition of these prepared fruits are preserved by rapidly freezing them at very low temperatures. After the fruit has frozen, the freeze-drying process takes place inside a vacuum chamber.

The temperature within the vacuum chamber is progressively raised while the pressure is kept extremely low. Due to this, the fruit's frozen water sublimates, or goes straight from a solid state (ice) to a gaseous one (vapor) without going through a liquid phase. Without using heat, this delicate method extracts the fruit's moisture while preserving its original color, shape, and nutritional value.

Fruit that has undergone freeze-drying is crisp, dry, and light when the procedure is finished. Because it has lost moisture, it has a long shelf life. After that, the finished product is carefully wrapped to keep out oxygen and moisture, which could cause it to spoil. Most of the vitamins, minerals, and natural flavors of the fruit are preserved during the freeze-drying process, making the resultant freeze-dried fruit a convenient and wholesome snack or ingredient that can be enjoyed in its crisp, dry state or rehydrated as needed.
