Step 1: Selecting the Fruit

Step 2: Freezing the Fruit

The next step is to freeze the fruit. The fruit is placed on trays and frozen at a temperature of around -40 degrees Celsius. This process freezes the fruit solid, which makes it easier to remove the moisture.
